Althaea officinalis Marsh Mallow is hardy perennial that grows to about 3 ft tall. The beautiful pink flowers attract pollinators. It was the original source of marshmallows and gave the favorite campfire treat its name. For more than 2000 years the plant was used for various medicinal purposes. Needs full sun, and thrives in light (sandy), medium (loamy) and heavy (clay) soils.
Marsh-mallow roots are a wonderful food source. The entire plant is edible and each part offers tremendous health benefits and has been used as a herbal remedy for thousands of years. Historically used for creating the marshmallow confection, the plant is now predominantly grown for making herb teas and as beneficial insect attracting shrub. Marshmallow’s creamy white roots have a wonderful flavor when simmered.
