Oxalis crassipes (Pink Wood-Sorel) is an evergreen tuft-forming perennial plant and herb in the family Oxalidaceae, reaching to 10 inches tall and slowly spreading to about 18 inches wide with decorative trifoliate clover-like leaves. This is an invaluable plant for Southern gardens, a prime choice for edging beds or pathways. Its lightly felted, cloverlike leaves make handsome mounds even when not it bloom Its original distribution is South America but has become a very cosmopolitan species, occurring in all continents except Antarctica. It can be found in both temperate and tropical areas. Bees absolutely love the flowers. Does not run, but forms tubers that withstand cold and dry. Zone 7B+. Plant these corms so that your oxalis can grow and multiply. They may be grown indoors in a pot. 5 bulbs will make a really nice group in a gallon container. Should be planted upon arrival, does no store well.
The flowers, leaves and roots are edible. Add a few leaves or flowers to a salad or soup as you would French Sorrel. The flavor is strong and sour, so add sparingly. Rich in vitamin C, it also contains high amounts of oxalic acid, similar to spinach. English recipes from the medieval period show wood sorrel sauces were served with fish and game.
