First cultivated thousands of years ago, einkorn is known as the oldest variety of wheat. The name ‘Einkorn’ is German for single grain. It grows on a finer stalk, more like a grass than normal wheat. This ancient grain is rich in a host of nutrients including beta carotene, protein, phosphorous, and potassium. Organic einkorn also has the highest amount of lutein of any other variety of wheat and is a rich source of tocotrienols and tocopherols, powerful antioxidants and forms of Vitamin E. Needs fertile, loamy, well-drained soil in full sun. 110 Days.
