Mexican squash is light green with darker green speckles and has a plump stubby appearance. This club shaped zucchini with mid light green with dark green veined skin is a Mexican favorite, calabacitas! The summer squash flavor is perfect in calabacitas con elote, sauteed, ratatouille, or gluten free pasta noodles. The large yellow blossoms are a special treat battered and fried. You can hollow them out and stuff them, or slice and steam them as you would any other zucchini type squash. The Mexican squash is slightly sweeter and firmer than zucchini.
