Heirloom Hyssopus officinalis is a brightly colored perennial shrub or subshrub that grows up to around 24 inches in height. Hyssop was well-established in English gardens by the 1400's, and was brought to America by early colonists. Thomas Jefferson listed Hyssop among plants for his kitchen garden in 1794. Sometimes used as an edging plant for gardens, this semi-evergreen sub-shrub forms spikes of violet-blue flowers in summer that are very attractive to bees and butterflies. The plant has a sweet scent and a warm, bitter taste. A strong tea made of the leaves and sweetened with honey is a traditional remedy for nose, throat, and lung afflictions and is sometimes applied externally to bruises. Zone 4 – 9.
