This French heirloom summer squash is not available in grocery stores. Also called Ronde de Nice, it grows on compact bush type plants and produces 1” to 5” round fruits. You can hollow them out and stuff them, or slice and steam them as you would any other zucchini type squash.
Like all other squash varieties, the blossoms are also edible and make wonderful stuffed and fried treats. If you happen to miss or forget to harvest a few fruits, there is another unique use for this variety. If left on the vine, the mature squash fruits will turn a yellowish salmon color in fall (looking quite a bit like mini-pumpkins) and can be harvested for ornamental use. You can even carve them and use them as luminaries on Halloween (but they are short-lived once carved).
