Red Calypso is a beautiful heirloom bean that is half-white and half-red with distinctive sharp boundaries that curve around the bean. Occasionally there will be a red spot or two on the white half. This bean is said to be native to the Caribbean region and dates back to the late 1600’s.
The Red Calypso Bean plant grows to about 20" producing pods that resemble a roma type bean. Mild flavor and creamy rich texture. Beans double in size when cooked and retain their color once cooked. Blends well with fresh corn. This is a great dual purpose bean that can be eaten as a green bean when young or let it mature for a great dried bean. Bush type, 50 days until harvest for fresh beans.
